almond joy cookies
With Halloween a few days a way, I created this candy like cookie reminisent of an almond joy candy bar. Around our house, I try to give treats that are healthy and nutrient dense, but sometimes it's ok to cheat a bit. When this happens, I still use high quality ingredients so that I feel a little less guilty.
It looks like Halloween in our neck of the woods is going to be freezing and rainy, so I will make some treats, let the kids play with friends and wrap it up early.
These yummy cookies are gluten and grain free. I use butter in this recipe , but it can probably be replaced with coconut oil.
What you will need
- 1 1/2 c almond flour
- 1 cup finely shredded coconut flakes
- 1/2 c softened butter (1 stick)
- 1/2 c evaporated cane sugar
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 egg
- 1 tsp. vanilla
- 1 c. chocolate chips
Directions
- Preheat oven to 325
- cream softened butter and sugar in mixing bowl until combined
- add egg, and vanilla
- in a separate bowl, combine dry ingredients (almond flour, coconut, salt, baking powder)
- whisk dry ingredients together
- add dry ingredients to wet mixture and fully combine
- add chocolate chips
- using a 2 inch ice cream scoop, place each cookie on sheet tray. I press each cookie down with my fingers a little as they don't spread all that much
- bake for 10-12 minutes until bottom is golden brown
- makes @ 2 dozen
- let cool
