soft baked chocolate chip cookies
Do you remember soft baked cookies from when you were young. They were yummy and so addictive you could eat the whole package. Ignorance was bliss back then, because I had no idea they were filled with preservatives, high fructose corn syrup, soy Lecithin and Vanillin. Vanillin is wood pulp that is an alternative used for vanilla extract to reduce production costs. I can speak at length regarding all of the ingredients contained in most packaged baked goods but that will give you an idea of what you are eating. Making food from high quality organic ingredients is worth your time investment. Your body will thank you and those who are eating the treats will think you are a rockstar!
What you will need
3 cups almond flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup unsalted butter
1 egg at room temperature
1 tsp. vanilla
1/2 cup pure maple syrup
1 (10 oz ) bag semi-sweet chocolate chips.
Directions
1. Combine all dry ingredients in a large bowl. Almond flour, baking soda, and salt
2. In another bowl whip butter, syrup, egg and vanilla
3. Mix dry ingredients into wet
4. Add chocolate chips, combine all ingredients
5. Place cookie dough in refrigerator for 20 minutes to set
6. using a 2 inch ice cream scoop, place dough on cookie sheet
7. Press dough balls down slightly as these cookies don't spread much
8. Place in a 350 degree oven for 9-12 minutes
9. Cool before eating. Best eaten freshly baked
10. Makes 2 dozen cookies
