spicy shrimp salad lettuce cups
Lunch is always my hardest meal to figure out. Most days, I hate to stop and make myself a meal. I try my best not to skip, because when I'm starving, I risk snacking and making unhealthy choices. This is so simple and doesn't require any cooking. I always keep a batch of my homemade mayo in the fridge (recipe below) so this masterpiece only took minutes to make and is full of flavor and spicy goodness. I use the best ingredients available, so when I saw 1 pound of frozen wild popcorn shrimp, I grabbed it. Feel free to play around with ingredients to make it your own. I love adding avocado when one is ripe, but a crunchy nut maybe a good addition too. I was short on time so I added mayo with a squeeze of Sriracha, a little lemon juice and celery.
What you will need
- 1 pound wild popcorn shrimp thawed
- 2 stalks of celery diced
- red onion optional
- 2-3 Tbsp homemade mayo (mayo recipe)
- 1 squeeze Sriracha
- squeeze 1/2 lemon about a tsp.
- salt and pepper to taste
- avocado or nuts optional
- 1 head butter lettuce
How to put it together
In a bowl add 1 pound of thawed shrimp, and 1tsp. lemon juice and season with salt and pepper. Mix 2-3 Tbsp. of mayo and Sriracha together and add to shrimp. Dice any extra ingredients, celery, avocado or nuts and add to bowl. Combine and mix everything together until all ingredients are coated. Fill lettuce cups and eat. Enjoy!
