salted toffee bars {gluten free}

When holiday cookie baking becomes a full time job,  It is a perfect idea to have a quick and easy one in the mix. These Salted Toffee bars are so delicious and pair the best combination of sweet and salty together. From start to finish, they take less than 30 minutes and are the best cookie gift to give. Think teacher gifts, wrapped in clear cellophane bags closed up with festive ribbon! This cookie doesn't win the prize for heathiest cookie, but I have chosen high quality organic ingredients that make me feel a little better like organic butter, walnuts and chocolate. Christmas time is a bit of a sugar overload, but with conscious swaps, you can keep those highs at bay. 

What you will need

  • Jelly roll pan

  • Food processor for dough/crust

  • 1 cup (2 sticks) organic butter

  • 2 cups gluten free flour (Bob's Red Mill)

  • 1 cup organic dark brown sugar

  • 1 teaspoon vanilla

  • 1 cup raw organic walnuts

  • 3 high quality chocolate bars ( choose dark or milk depending on preference)

  • Sea salt

Putting it together

  • In a food processor, using the blade attchment, add gluten free flour, brown sugar, vanilla and cubed, chilled butter

  • Pulse until it starts coming together and then set on high. It will make a thick dough that is wonderfully smooth and buttery

  • Press dough in jelly roll pan, making sure to evenly cover bottom of pan

  • Bake in a 350.F oven for 16 minutes are until crust begins to turn a light brown

  • Take out of oven and place chocolate bars on dough. Leave for a few minutes, to give it a chance to melt

  • With a knife, spread chocolate evenly and sprinkle with chopped walnuts.

  • Sprinkle with sea salt

  • Before cookies are completely cooled, cut them into bars. It is so much easier to cut while they are still warm.
