almond butter blossoms {paleo}
Remember the peanut butter cookies with Hershey’s kisses that everyone makes for the Holidays? This is my spin on those cookies, using incredibly clean ingredients and Hu Kitchen Dark Chocolate bars. You will never miss the original with this one!
The Holidays can be a difficult time for those on special diets. There is still some wiggle room when you live a Paleo lifestyle and If you want to treat yourself, then by all means, treat yourself. You can still maintain good choices and still enjoy something sweet. Depending on how strict you are, you can even swap out the almond butter for peanut butter and it will taste a bit more like the original.
These treats are so simple to make with just a few ingredients and look so festive. This recipe will make 2 dozen cookies when you use a small scooper. This makes uniform cookies and enough for seconds and thirds and…
INGREDIENTS
1 cup unsweetened almond butter
1 cup coconut sugar
1 egg
1 tsp. vanilla
1/4 tsp salt
DIRECTIONS
Break chocolate bars into equal pieces for 18 cookies. (there may be some left over)
In a medium sized mixing bowl, add sugar, almond butter and egg
Gently mix, to incorporate all ingredients
Add vanilla and salt, stir
Using a small scooper, place dough 2 inches apart on a parchment lined baking sheet
Bake on 325°F for 9-10 minutes
Cook cookies for 5 minutes
Place a piece of chocolate on each cookie, pressing down lightly so it is nestled inside
Let Cool before storing in a sealed airtight container
