banana pancakes {paleo, gluten free, grain free, dairy free}
I'm not going to lie, I make pancake mixes for the kids often. Mostly because we all have different limitations, and this Mama isn't going to make 3 batches from scratch! I have struggled to find a Paleo pancake that we all like and that actually works and looks like a pancake when it is served. I woke up last week and wanted pancakes, so I got to work with ingredients I had on hand. There are probably 100's of recipes for Paleo pancakes out there, and each with small differences. Some may be fluffy or dense, but I think my version came out perfectly for my audience. They really do taste like clouds of banana bread and these pancakes make this Mom really happy. Also, leftover alert, if by chance you have extras, which most likely you won't, toast them and top with any nut butter of your choice and there you have another breakfast!
What you will need
- 2 ripe bananas
- 4 eggs
- 1/2 tsp. vanilla
- 1 cup Almond flour (I am obsessed with Honeyville)
- 2 Tbs. Arrowroof flour
- 1 tsp. baking powder
- Dash of salt
Putting it together
- In a large bowl, mash bananas. Add eggs and whisk together.
- Add almond flour, arrowroot, baking powder and salt.
- Combine all ingredients fully, batter will be a bit lumpy
- Heat a nonstick pan on low heat. Spray with nonstick cooking spray or a pad of butter.
- Using a 1/4 cup, scoop batter into heated pan. Cook with cover until ready to flip, about 3 minutes or until golden brown.
- Serve with maple syrup. Freeze leftovers or simple store in refrigerator.
