paleo blender pancakes {gluten free, grain free, dairy free}
Yep, you are seeing right, these are green pancakes and they taste amazing. Sneaking veggies in to all things edible has become kind of my trademark. My oldest laughs at me, my middle rolls her eyes and my baby just eats it. I've never really thought of pancakes this way, but they are similar to smoothies. You have the base and can add all of your healthy favorites to basically pump them up and take it over the top. These are Paleo, which makes them even better for me. Gluten, grain and dairy free and not missing a bit of deliciousness. If you happen to have leftovers, you can freeze them for later, or simply refidgerate. I like to use them as toast the second time around, and layer with my favorite nut butter and fruit. Just another quick recipe for those crazy mornings, when you have run out of ideas. Enjoy
What you will need
2 ripe bananas
2 cups organic fresh spinach
2 Tbs. almond butter
4 eggs
1/2 tsp. vanilla
1 cup Almond flour (I am obsessed with Honeyville)
2 Tbs. Arrowroof flour
1 tsp. baking powder
Dash of salt
Putting it together
In a high speed blender, mix all ingredients on high. If blender is having a difficult time combining ingredients, add 1-2 Tbs. warm water.
Heat a nonstick pan on low heat. Spray with nonstick cooking spray or a coconut oil.
Using a 1/4 cup, scoop batter into heated pan. Cook with cover until ready to flip, about 3 minutes or until golden brown.
Serve with maple syrup. Freeze leftovers or simple store in refrigerator.
