carmelized onion dip
My little sister is 9 years younger and was obsessed with dips from the time she was small. Sometimes we waited forever to start eating while she created a concoction to add flavor to her meal. This became a thing in my family and we made meals around dips because it made Kerry happy.
While I was making this for a party, all i could do was think about how much she would love this. This is Onion dip on steroids. It is so yummy and will go perfect for any Sunday football bash or a platter for a party with any food that is dippable. Pair it with veggies, gluten free pretzels and crackers, even grilled chicken on skewers.
I also love the idea of packing it in the kid’s lunches with veggies for a snack. It is so versitle and filled with flavor and it doesn’t hurt that it is so much better for you than the store bought brands.
INGREDIENTS
2 large organic white onions
16 oz. container organic full fat sour cream
8 oz. container organic full fat cream cheese
2 Tbs. avocado oil
1 Tbs. worcestershire sauce
1 tsp. fresh or dried chives
3 Tbs. fresh parsely (keep a few sprigs separate for finishing)
Salt and pepper to taste
DIRECTIONS
in a medium sized skilled, add 2 tablespoons avocado oil
Thinly slice onions and place in skillet
On low heat, simmer for up to 1 hour, stirring frequently until onions carmelize
Remove from heat and cool
In a separate bowl, mix sour cream, cream cheese, worcestershire sauce, chives, parsely and
S & P to taste
Add cooled onions and combine all ingredients (you can keep onions whole or chop them up smaller if you prefer)
Top finished dip with parsely
Serve with favorite veggies, chips, crackers, pretzels or protein
