nut cookies
A few years ago I travelled to Petaluma, California to attend an Intensive Healing Retreat, using the teachings of Wisdom Healing Qigong. I walked away with many tools for healing one's body, quieting the mind and knowledge of Qi. Qi is life force energy that can transform a person on many levels.
It was at this center that I spent two weeks learning this amazing mind, body practice and also being nourished with incredible food from their organic garden. Even healthy eaters need a treat, so the staff created these gluten free, dairy free, processed sugar free nut cookies to satisfy our cravings. The chef shared her recipe and I have been making them for my family ever since.
Ingredients
1 cup raw cashews
1 cup raw almonds
1 cup raw walnuts
1/2 cup almond butter (choose one with no sugar or added ingredients)
1/2 cup pure maple syrup
Directions
In a food processor, combine all nuts and blend until sand like consistency. It's ok to have a few chunks of nuts floating around
Put nut mixture in a bowl.
Add almond butter and maple syrup. I've tried heating this mixture in a saucepan and it makes it easier to pour over nuts but it is not a necessary step.
Combine all ingredients until nut mixture is fully coated
Using a small melon scoop, place each cookie on a baking sheet
Place in a 300 degree oven for 12-14 minutes.
Let cool completely before transferring to storage
